Chicken Pasta Bake

• 1 lb pasta (penne, rotini, or your favorite)
• 1 tbsp olive oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 lb cooked chicken, shredded
• 1 can (14.5 oz) diced tomatoes, undrained
• 1 cup chicken broth
• 1 cup heavy cream
• 1 cup shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• Salt and pepper to taste

1. 1 Preheat oven to 375°F (190°C). Cook pasta according to package directions.
2. 2 While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
3. 3 Stir in shredded chicken, diced tomatoes, and chicken broth. Bring to a simmer and cook for 10 minutes.
4. 4 Stir in heavy cream, mozzarella cheese, and Parmesan cheese. Season with salt and pepper to taste.
5. 5 Add cooked pasta to the skillet and toss to combine.
6. 6 Transfer the mixture to a 9x13 inch baking dish.
7. 7 Bake for 20-25 minutes, or until bubbly and golden brown.
